بررسی پاسخ‌های مورفوفیزیولوژیک، فیتوشیمیایی و آنتی‌اکسیدانی خرفه (Portulaca oleracea L.) در شرایط تنش شوری

چکیده

گیاه خرفه (Portulaca oleracea L.) گیاهی یک‌ساله از خانواده Portulacaceae است که در نواحی گرم و شور می‌روید و از دیرباز یکی از مغذی‌ترین سبزی‌های بومی به شمار می‌آید. با گسترش شوری خاک در مناطق خشک ایران به‌ویژه در اطراف دریاچه ارومیه، درک چگونگی مقابله این گونه با سطوح بالای نمک، هم برای کشت و کار و هم برای داروسازی اهمیت دارد. در پژوهش حاضر، واکنش خرفه به دو سطح هدایت الکتریکی خاک (۲ و۱۶ دسی‌زیمنس بر متر)، در شرایط مزرعه‌ای و در قالب طرح بلوک‌های کامل تصادفی در سال 1403 در دانشگاه ارومیه با سه تکرار ارزیابی شد. نتایج نشان داد شوری بالا، وزن تر، وزن خشک و تعداد برگ را به‌ترتیب ۹/۳۳، ۳/۳۶ و ۴/۳۸ درصد کاهش داد و محتوای نسبی آب برگ، کلروفیل کل و کارایی فتوسیستم دو نیز کاهش قابل توجهی نشان دادند. در میان صفات یونی، تجمع سدیم در ریشه، ساقه و برگ به‌ترتیب ۲۲۱، ۲۰۸ و ۱۰۳ درصد بیشتر از شاهد بود و نشت الکترولیت از ۹۵/۳۱ به ۶۷/۵۷ درصد رسید. در شرایط شوری، گیاه با افزایش آنتوسیانین، پلی‌فنل اکسیداز، سوپراکسید دیسموتاز، کاتالاز و پراکسیداز واکنش داد. به‌طورکلی، خرفه با ترکیبی از تنظیم اسمزی، فعال‌سازی سپرهای آنزیمی و غیرآنزیمی و محدودسازی انتقال سدیم به برگ توانست با شوری ۱۶ دسی‌زیمنس بر متر سازگار شود؛ با این حال، کاهش معنی‌دار رشد در همین سطح نشان می‌دهد که این مقدار در حد آستانه تحمل فیزیولوژیک خرفه بوده است.
